Using real chanterelles, authentic French goat cheese (yes, I hunted down tomme de chèvre de pays), La'Aquilla saffron, and French pâte à choux, I made a real-life version of that iconic scene… including a smoker, duxelles filling and a bit of dramatic weather. 🧀
